Classic Croque Monsieur
This French-style toastie is très bien, made with the best meltingly good Gruyere cheese and smoked ham.
Serves:
4
Prep Time: 15 minutes
Cooking Time: 10 minutes
Ingredients
- 75g butter
- 8 thick slices sourdough or multi-grain bread
- 1/4 cup plain flour
- 11/2 cups milk
- 200g gruyere, grated
- sea salt and freshly ground black pepper, to taste
- seeded or Dijon mustard, for spreading
- 200g shaved smoked ham
Method
Melt the butter in a heavy based saucepan and use some to brush bread slices on one side. Toast buttered side of bread only under a hot grill until golden. To make bechamel sauce, add flour to the remaining butter in the saucepan and cook, stirring for one minute. Whisk in milk and bring to the boil until thickened. Stir in half the cheese until melted and season with salt. Spread the untoasted side of 4 slices of bread with mustard, half the béchamel and top with ham and remaining cheese. Grill until cheese melts. Spread remaining bread with mustard on the untoasted side, and sandwich on top of filling, toasted side up. Spread with remaining béchamel and grill until lightly browned. Serve immediately sprinkled with pepper.
