Coconut Semolina with Passionfruit Pears

Coconut Semolina Porridge with Pears and Passionfruit
This semolina porridge tastes too good to be true! It's a creamy and coconuty and topped with sweet pears and tangy passionfruit which gives it a tropical twist.

Cooking Time: 10 minutes

Ingredients

  • 600ml coconut milk
  • 600ml reduced fat milk
  • 60g caster sugar
  • 120g fine semolina
  • 500g canned pears in natural juice
  • 100g passionfruit in syrup
  • toasted shaved coconut, for garnish
  • mint leaves, for garnish

Method

  • Heat coconut milk, milk and sugar together in a large saucepan until starting to simmer. Whisk in semolina and just bring to the boil, stirring continuously, until thickened. Allow to stand for 5 minutes to thicken further.
  • Portion coconut semolina into bowls and top each serving with pears, passionfruit and sprinkle with coconut and mint leaves.

Tips

If the semolina is too thick for your liking, just mix in a little extra milk.
