Croque Monsieur
Surely the world's best ham and cheese toastie!
Serves:

Cooking Time: 10 minutes
Ingredients
- 75g butter
- 8 thick slices crusty bread
- 1/4 cup plain flour
- 11/2 cups milk
- 200g gruyere, grated
- sea salt and freshly ground black pepper, to taste
- Dijon mustard, for spreading
- 200g shaved smoked ham
- cornichons, for serving
Method
Melt the butter in a heavy based saucepan and use some to brush bread slices on one side. Toast buttered side of bread only under a hot grill until golden. To make bechamel sauce, add flour to the remaining butter in the saucepan and cook, stirring for one minute. Whisk in milk and bring to the boil until thickened. Stir in half the cheese until melted and season with salt. Spread the untoasted side of the bread with mustard, half the béchamel and top with ham, remaining cheese and remaining bechamel. Grill until until lightly browned. Serve with cornichons.
