Vanilla Pannacotta Shots with Raspberry Jelly

Little pots of creaminess with a fruity jelly are the perfect grazing sweets.

Makes:

24 shot-size desserts

Prep Time: 20 minutes (plus 2-4 hours setting time)

Cooking Time: 5 minutes

Ingredients

  • 2 tablespoons powdered gelatine
  • 1/3 cup cold water
  • 3 cups cream (35% milkfat)
  • 1 cup whole regular milk
  • 1/2 cup caster sugar
  • 1 tablespoon vanilla extract
  • 85g packet natural strawberry jelly crystals
  • 1 cup boiling water
  • 1 cup cold water, extra
  • 1/2 cup frozen raspberries, thawed

Method

Sprinkle gelatine over cold water and allow to swell. Dissolve in microwave on High for 30 sec-1 minute or over a saucepan of boiling water, until clear. Heat cream, milk and sugar together until almost boiling and sugar has dissolved. Stir in dissolved gelatine and vanilla. Pour into 24 shot glasses and refrigerate until set (1-2 hours). Dissolve jelly crystals in boiling water, add extra cold water and allow to cool completely. When pannacottas are set, top with raspberries, pour over jelly and refrigerate until set (1-2 hours).
