Fig, Prosciutto and Triple Cream Brie Bruschetta
Combine sweet crunchy figs, smokey prosciutto and creamy brie to make an elegant entrée or easy lunch for one!

Serves:

6 as an entree

Prep Time: 10 minutes

Cooking Time: 15 minutes

Ingredients

  • 200g triple cream brie
  • 6 slices baguette, cut diagonally
  • olive oil spray
  • sea salt and freshly ground black pepper, to taste
  • 12 thin slices prosciutto
  • 3-4 ripe fresh figs, sliced
  • warmed honey, for brushing

Method

Remove brie from refrigerator and allow to come to room temperature. Spray baguette slices on both sides with olive oil and season with salt and pepper. Grill on both sides until lightly toasted. Cut brie into six slices. Place baguette toasts onto individual serving plates, top each with two slices of prosciutto, brie, figs and brush figs with honey. Sprinkle with pepper and serve as an entrée.
