Fig Semolina Flan with Thyme Honey

A quick mix tart-like flan that is great with figs, plums, cherries, peaches or apricots. Delicious served warm fresh from the oven.

Cooking Time: 30 minutes

Ingredients

  • 1 cup icing sugar
  • 1/2 cup plain flour
  • 1 1/2 cups fine semolina
  • 3 eggs, lightly beaten
  • 180g butter, melted
  • 8-10 fresh figs, cut in half
  • raw sugar, for sprinkling
  • 1/4 cup honey
  • 1 tablespoon fresh thyme sprigs
  • double cream, for serving

Method

  • Mix together icing sugar, flour and semolina together in a bowl. Make a well in the centre, mix in eggs and butter. Pour into a buttered 30cm flan tin with removable base. Arrange figs, cut side up, on top and sprinkle with sugar.
  • Bake at 200°C in the upper half of the oven for 30 minutes until golden brown.
  • Remove from flan tin onto a serving plate, drizzle with Thyme Honey and serve warm with cream.
  • THYME HONEY Heat honey and thyme together for 2 minutes and allow to cool to infuse.

Tips

  • Substitute figs with fresh apricot halves when they are in season.
  • STYLING Drizzle with honey at the last moment and finish with small sprigs of thyme.
