Full Of Apple Slab Cake

This cake is just choc-a-block full of juicy apples and is equally delicious served warm with custard or allowed to cool and cut into squares to pack for a picnic.

Makes:

1 x 16cm x 25cm slab tin

Prep Time: 15 minutes

Cooking Time: 45 minutes

Ingredients

  • 2 cups plain flour
  • 1 cup raw sugar
  • 1 cup dark brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1/2 cup walnuts nuts
  • 750g Granny Smith appels, peeled, cored and diced
  • 1/2 cup extra light olive oil
  • 2 large eggs, lightly beaten
  • raw sugar and cinnamon, for sprinkling

Method

Butter and line a slab tin (16cm x 25cm or similar). Combine flour, sugars, cinnamon, bicarbonate of soda, salt and walnuts together. Stir in apples, then mix in oil and eggs to coat apples. You may need to use your hands to bring the mixture together. Press into the slab tin and sprinkle with raw sugar and cinnamon. Bake at 180°C for 40-45 minutes until golden. Turn out and serve warm or cold.
