Honey Pear Almond Flan

A pretty flan that is simple to make with pears, apples, stonefruit or even poached quince.

Makes:

1 x 26cm flan

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 125g butter, softened
  • 1/2 cup caster sugar
  • grated rind 1 lemon
  • honey, as needed
  • 3 eggs
  • 1 cup self raising flour
  • 1/2 cup ground almonds or hazelnuts
  • 1 teaspoon cinnamon
  • 4 Beurre Bosc pears, peeled, cored, sliced

Method

Beat butter, sugar, lemon rind and 2 teaspoons honey together until creamy. Gradully beat in the eggs. Fold in flour, almonds and cinnamon. Pour into a buttered 26cm flan tin with removable base. Arrange the pears decoratively on top in a swirl pattern. Bake at 180°C for 30 minutes until golden brown. Brush pears with honey while still warm. Allow to cool for 5 minutes before removing onto a wire rack to cool. Serve with cream.

Tips

QUINCE HAZELNUT FLAN Substitute pears for poached quince and use ground hazelnuts in place of almonds.
