Huevos Estrellados – Spanish ‘Broken’ Eggs with Jamon and Potatoes

Huevos Estrellados
A yummy Spanish staple, this dish is a great excuse to have chips for breakfast or brunch!

Serves:

Ingredients

  • 4 potatoes, peeled and cut into chips
  • extra light olive oil, for deep frying
  • 1/2 cup extra virgin olive oil
  • 8 large eggs
  • 8 slices jamon
  • smoked paprika, for sprinkling
  • sea salt and freshly ground black pepper, to taste

Method

Season uncooked potatoes with salt and deep fry in hot oil until just soft but still pale. Drain on absorbent paper and allow to cool. Heat oil again and flash fry chips for a second time until crisp and golden. Drain. Heat extra virgin olive oil in a large frypan and fry eggs, over low to medium heat until the white is cooked but the yolks are still runny. Arrange chips and jamon onto plates, top with eggs and a sprinkling of smoke paprika, salt and pepper.

Tips

Leftover roast potatoes can be used to make chips. Just fry them once.
