Satay Chicken Skewers
Tasty spiced skewers of chicken that are so good you won't be able to stop at one.
Serves:
4
Prep Time: 30 minutes plus marinating time
Cooking Time: 20 minutes
Ingredients
- 750g boneless chicken thighs, cubed
- 2 onions, chopped
- 3 cloves garlic, peeled
- grated rind and juice of 1 lime
- 2 teaspoons Thai-style curry powder
- 1 teaspoon turmeric
- 1/4 teaspoon chilli flakes
- 1 teaspoon salt
- 1 tablespoon brown sugar
- 1 cup salted peanuts
- 1 tablespoon oil
- 400g can coconut milk
- fish sauce or soy sauce, to taste
Method
Thread chicken onto 8 skewers. Blend onions, garlic, lime rind and juice, curry powder, turmeric, chilli, salt and sugar together in a blender to make a paste. Use half the paste to spread over the chicken and marinate for at least 30 minutes (or refrigerate overnight). Add the peanuts to the remaining paste in the blender and blend to a paste. Heat the oil in a saucepan and sauté the peanut paste for 5 minutes until aromatic and onion flavour has softened. Mix in coconut milk, bring to the boil and simmer for 10-15 minutes until thickened. Season with fish sauce. Chargrill chicken skewers for 5 minutes on each side until cooked through and golden brown. Serve skewers with satay sauce.
Tips
Serve chicken satay skewers with steamed rice, sliced cucumber and a sprinkling of peanuts.
