Jamaican Red Beans and Rice
This is a great side dish to serve with curry or even as a light meatless meal on it's own.
Serves:
6
Prep Time: 10 minutes
Cooking Time: 30 minutes
Ingredients
- 4 spring onions
- 1 tablespoon oil
- 1 teaspoon allspice
- 2 teaspoons dried thyme
- 2 cups long grain rice
- 400g red kidney beans, drained and rinsed
- 400g can light coconut milk
- 3 cups water
- sea salt and freshly ground black pepper, to taste
Method
Chop white and green sections of spring onions separately. Heat oil in a large saucepan and sauté white spring onion together with allspice and thyme until softened. Add rice, beans, coconut milk and water and season. Bring to the boil, cover and simmer for 5 minutes. Turn off and stand for 20 minutes without removing lid at which time the rice should be perfectly cooked. Stir in green spring onion and serve.
