Kale, Feta and Pine Nut Filo Spirals

Little spiral filo pastries filled with feta, pine nuts and kale, instead of the usual spinach.

Cooking Time: 20 minutes

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 500g kale, fienly chopped
  • 4 spring onions, chopped
  • 1/4 cup water
  • 1 teaspoon salt
  • 400g feta cheese
  • 4 eggs
  • 16 sheets filo pastry
  • 150g butter, melted
  • sesame seeds or poppy seeds, for sprinkling

Method

Heat oil in a large frypan and cook kale, spring onions, water and salt until wilted. Allow to cool. Crumble in feta cheese and mix in eggs. Working quickly, brush one sheet of pastry with butter and spoon 1/16 of the filling along one of the long sides. Roll up tightly into a thin long roll and make into spirals. Place on oven tray and brush with butter. Repeat with remaining mixture and pastry, to make 16 spirals. Sprinkle with seeds. Bake at 200°C for 15-20 minutes until puffed and golden.

Tips

Make sure to wrap any unused filo pastry in plastic wrap and return to refrigerator for another use.
