Spiced Plum Glazed Ham

A fruity glazed ham is a must for the Christmas table.

Makes:

1 x 5-6kg ham

Prep Time: 15 minutes

Cooking Time: 2 hours

Ingredients

  • 5-6kg ham on the bone
  • cloves, for studding
  • PLUM GLAZE
  • 1 cup plum or cherry jam
  • 1/2 cup dark brown sugar
  • 1/4 cup aged balsamic vinegar
  • 2 tablespoons port
  • 1 tablespoon wholegrain mustard
  • 1 teaspoon mixed spice
  • 2 strips orange rind
  • 6 star anise

Method

  • Use a sharp knife to cut the rind around the shank end of the ham, and remove the rind using your fingers. Trim fat and score with a knife. Decoratively stud with cloves. Place in a roasting dish and bake at 200°C for 15 minutes. Reduce temperature to 160°C and brush the ham all over with half the glaze. Bake for 1 1/2 hours, basting regularly with glaze. Allow to stand 15 minutes before carving, serving any extra glaze on the side.
  • PLUM GLAZE Heat all ingredients together in a saucepan until combined and simmer for 2 minutes.
