Linguine Carbonara

Linguine Carbonara
An Italian classic, and this version does have a little cream added!

Serves:

Prep Time: 10 minutes

Cooking Time: 20 minutes

Ingredients

  • 500g linguine
  • 50g butter
  • 1 onion, finey diced
  • 200g pancetta or streaky bacon, diced
  • 3 eggs
  • 1 cup cream
  • 125g grated parmesan
  • sea salt and freshly ground black pepper, to taste

Method

Cook linguine in a large pot of boiling salted water until al dente. Meanwhile, heat oil in a frypan and sauté onion and pancetta until golden. Combine half the parmesan with the eggs and cream and lightly beat with a fork. When cooked, drain pasta, reserving 1 cup of cooking liquid. Quickly toss hot pasta with onion and bacon and egg mixture, stirring until just set and adding a little cooking liquid if needed. Season spoon into bowls and serve sprinkled with pepper and remaining parmesan.
