Loukoumades – Greek Honey Fritters

Yiayia's recipe for crisp golden balls of deliciousness coated in a cinnamon scented honey are to die for!

Serves:

4

Prep Time: 10 minutes (plus 20 minutes standing time)

Cooking Time: 15 minutes

Ingredients

  • 1 cup plain flour
  • 3/4 cup warm water
  • 2 teaspoons dried yeast
  • 1 teaspoon sugar
  • extra light olive oil or canola oil, for deep frying
  • 1/4 cup chopped walnuts, optional, for serving
  • cinnamon, for dusting
  • HONEY SYRUP
  • 1 cup honey
  • 1/2 cup water
  • 2 tablespoons lemon or orange juice
  • 5 cloves
  • 1 cinnamon stick or 1 teaspoon ground cinnamon

Method

  • Place flour in a bowl and make a well in the centre. Add the water to make a pool and mix the yeast and sugar into water. Combine together to form a thick batter, cover and allow to stand for 20 minutes or until roughly doubled in size. Do not stir. Meanwhile, make the syrup and allow to cool. Heat the oil in a large saucepan or wok and, using two metal spoons, drop tablespoons of the batter into the hot oil. Try not to mix the batter too much so that the air pockets remain and you get airy fritters. Deep fry until golden brown. Drain on absorbent paper. Toss in the cooled Honey Syrup. Serve sprinkled with walnuts and cinnamon. Best eaten immediately!!
  • HONEY SYRUP Place all ingredients in a large saucepan and simmer for 5-10 minutes (take care as the mixture boils over easily). Allow to cool. Use as required.

Tips

Batter can be made in advance and left at room temperature for up to 2 hours, or refrigerate for up to 24 hours and return to room temperature before cooking.
