Mango Meringue Mess with Macadamia Praline
A simple yet simply delicious dessert.

Prep Time: 15 minutes

Cooking Time: 5 minutes

Ingredients

  • ¼ cup sugar
  • 2 tablespoons water
  • ¼ cup chopped macadamia nuts
  • 300ml cream
  • 4 meringue nests, broken into pieces
  • 2 mangoes, diced

Method

Heat sugar and water in a saucepan, stirring until dissolved and then boil without stirring to form a golden toffee. Working quickly, stir in macadamias, spread onto a baking paper lined tray and allow to cool. Chop to make macadamia praline. Whip cream until soft peaks form. Just before serving, layer meringue, mango, half the praline and cream into in four serving glasses and garnish with remaining praline.
