Open Breakfast Omelette

The perfect breakfast for one....or two, or however many! Swap out the herbs or cheese to change it up as you like it.

Makes:

Prep Time: 5 minutes

Cooking Time: 5 minutes

Ingredients

  • 1 small tomato, chopped
  • extra virgin olive oil, fro drizzling
  • sea salt and pepper, to taste
  • 2 eggs
  • 20g butter
  • 30g feta cheese, crumbled or grated cheddar cheese
  • 1 tablespoon chopped continental parsley, basil or dill
  • toast, for serving

Method

  • Drizzle tomato with oil and season to taste.
  • Lightly beat the eggs and a pinch of salt with a fork. Melt the butter in a small frypan and swirl in the eggs. Use a metal spatula to draw in the sides a few times, to create some texture, and then allow to begin to set underneath.
  • Top with tomato, crumbled feta, parsley and sprinkle with pepper, cooking until the egg is just set.
  • Slide onto a plate and serve with toast.
