Open Breakfast Omelette
The perfect breakfast for one....or two, or however many! Swap out the herbs or cheese to change it up as you like it.
Makes:

Cooking Time: 5 minutes
Ingredients
- 1 small tomato, chopped
- extra virgin olive oil, fro drizzling
- sea salt and pepper, to taste
- 2 eggs
- 20g butter
- 30g feta cheese, crumbled or grated cheddar cheese
- 1 tablespoon chopped continental parsley, basil or dill
- toast, for serving
Method
- Drizzle tomato with oil and season to taste.
- Lightly beat the eggs and a pinch of salt with a fork. Melt the butter in a small frypan and swirl in the eggs. Use a metal spatula to draw in the sides a few times, to create some texture, and then allow to begin to set underneath.
- Top with tomato, crumbled feta, parsley and sprinkle with pepper, cooking until the egg is just set.
- Slide onto a plate and serve with toast.
