Passionfruit Lemon Cloud Tarts

Soft pillowy clouds of lemon cream in a crisp tart shell with a drizzle of tangy passionfruit.

Ingredients

  • 600ml Bulla Thickened Cream, chilled
  • 1 cup (350g) lemon curd or lemon butter
  • pulp of 8 passionfruit
  • 24 cooked shortcrust pastry tartlet shells

Method

Beat Bulla Thickened Cream and lemon curd together until soft peaks form, approximately 2 minutes. Spoon a little passionfruit pulp into the base of each tartlet shell, dollop with Lemon Curd Cream and drizzle with remaining passionfruit. May be assembled and refrigerated 2 hours in advance.

Tips

Use raspberry puree instead of passionfruit. Sprinkle with toasted flaked almonds or toasted coconut flakes if desired.
