Pasta with Porcini Mushroom Sauce

This creamy porcini wine sauce is divine with any sort of pasta.

Serves:

6 as an entree / 4 as a main

Prep Time: 15 minutes

Cooking Time: 20 minutes

Ingredients

  • 500g pasta (eg. orecchiete, casarecce, penne or spirali)
  • 40g dried porcini mushrooms
  • 50g butter
  • 1 tablespoon crushed garlic
  • 500g sliced mushrooms
  • 250ml dry white wine
  • 600ml cooking cream
  • sea salt and pepper, to taste
  • 1 tablespoon chopped fresh thyme
  • 2 spring onions, finely chopped

Method

Cook the pasta in a large pot of boiling salted water until al dente. Drain. Cover porcini mushrooms with 1 cup boiling water and stand until soft. Chop into large pieces with scissors. Melt the butter in a large frypan and sauté the garlic and mushrooms until softened, seasoning to taste. Add the wine, soaked porcini and their liquid, and cream and bring to the boil. Allow to reduce until saucy. Stir in thyme and spring onions. Stir in pasta until heated through and serve sprinkled with pepper and extra thyme.

Tips

Porcini Mushroom Sauce can be made up to 2 days in advance, kept refrigerated and reheated for serving.
