Peach Raspberry Cobbler with Lemon Thyme

Ingredients

  • 1 kg fresh peaches, cut into wedges, stones removed
  • 2 tablespoons sugar
  • 2 tablespoons cornflour
  • 1 punnet raspberries
  • 2 tablespoons lemon thyme leaves, optional
  • 1 cup plain flour
  • 3/4 cup caster sugar
  • 1 teaspoon baking powder
  • 125g butter, softened

Method

Combine peaches, sugar and cornflour together in a pie dish. Sprinkle with raspberries and lemon thyme. Combine flour, sugar and baking powder together and mix in butter, squeezing with your hand to make a stiff dough. Crumble dough onto the top of fruit and bake at 200°C for 30 minutes until golden brown. Serve with cream or vanilla ice cream.
