Perfect Pancakes

Perfect Pancakes
This pancake recipe was perfected by my daughter and is now a family favourite, particularly when served with fresh berries and maple syrup.

Ingredients

  • 2 cups self-raising flour
  • 1/3 cup caster sugar
  • 1 1/2 cups milk
  • 1 egg
  • 2 teaspoons vanilla extract
  • butter, for frying
  • fresh berries and maple syrup, for serving

Method

Combine flour and sugar together in a bowl. Whisk milk, egg and vanilla together. Make a well in the centre of the flour, add milk mixture and whisk until smooth. Heat a frypan with a knob of butter, swirling to coat the base of the pan. For each pancake, add 1/4 cup batter to the buttered pan and cook over medium heat for a few minutes until bubbles form on the surface and the underside is golden brown. Flip over and cook for a further minute until golden underneath. Remove from pan and keep warm on a covered plate while cooking the remaining pancakes. Serve with berries and maple syrup.
