Piquant French Beans

A great way to add a little flavour to green beans.

Serves:

Cooking Time: 15 minutes

Ingredients

  • 500g green beans or snake beans*
  • 50g butter
  • 2 streaky rashers bacon, finely chopped
  • 1 small red capsicum, finely chopped
  • 1 clove garlic, crushed
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brandy
  • sea salt and freshly ground black pepper, to taste

Method

  • Place beans in a large frypan with 1 cup water and simmer covered for 5 minutes or until just tender. Drain and refresh under cold water. Melt butter in the frypan and sauté bacon, capsicum and garlic until softened. Add Worcestershire sauce, brandy and beans and toss until beans are warm. Season and serve immediately.
  • * If using snake beans, tie each into a knot after boiling. Place onto a heated serving dish and keep warm, then pour the piquant mixture over the beans to serve.
