Greek Pumpkin, Feta and Dill Pita – (Kolokithopita)

A crisp Greek-style savoury pie with a filling of sweet pumpkin and salty feta, with a touch of dill. It's delicious served hot.

4-6

Prep Time: 20 minutes

Cooking Time: 15 minutes

Ingredients

  • 500g grated pumpkin
  • 1/2 cup dill or parsley, chopped
  • 2 spring onions, chopped
  • 1/2 teaspoon salt
  • 200g feta cheese
  • 2 eggs
  • 12 sheets filo pastry
  • 125g butter, melted
  • 2 teaspoons sesame seeds or poppy seeds

Method

Combine pumpkin, spring onions, dill and salt in a large bowl. Crumble in feta cheese and mix in eggs. Working quickly, brush sheets of pastry with butter, laying and overlapping 6 of them on the base of a 40cm round baking dish. Place filling the centre and top with remaining buttered filo sheets, crumpling and folding in the edges to enclose. Brush with butter and sprinkle with seeds. Bake at 200°C for 20-25 minutes until puffed and golden. Position on the base of the oven for the last 5 minutes to crisp the base.

Tips

Make sure to wrap any unused filo pastry in plastic wrap and return to refrigerator for another use.
