Roast Zucchini and Capsicum with Feta
A simple side dish that makes the most of zucchini.

Serves:

4

Prep Time: 5 minutes

Cooking Time: 15 minutes

Ingredients

  • 2 large zucchini
  • 4 small baby capsicum or 1 red capsicum, cut into wedges
  • extra virgin olive oil
  • sea salt and freshly ground black pepper, to taste
  • 100g feta cheese, crumbled

Method

Cut zucchini in half lengthwise, and cut into 4 cm pieces. Place on a roasting tray with capsicum, drizzle with oil and season and toss to coat. Roast at 200°C for 15 minutes until zucchini is golden on the cut surface but still retaining its bright green colour. Arrange on a platter, sprinkle with feta, drizzle with oil and serve sprinkled with pepper.
