Saucy Skillet Potatoes

A saucy side that is a great way to tenderly cook potatoes. Perfect with steak.

Serves:

Prep Time: 10 minutes

Cooking Time: 20 minutes

Ingredients

  • 2 tablespoons olive oil
  • 2 onions
  • 1 teaspoon salt
  • 750g potatoes, peeled
  • 1 cup beef stock
  • 50g butter
  • freshly ground black pepper, to taste

Method

Heat oil in a large skillet and sauté onions and salt until golden brown. Cut potatoes into 1cm slices and arrange in the skillet, overlapping them and arranging some onions on top. Add beef stock, cover and simmer for 15 minutes until potatoes are tender. Dot with butter and simmer uncovered a further 5 minutes until saucy. Serve sprinkled with pepper.

Tips

Can be made in advance and reheated on the stovetop prior to serving.
