Smoked Salmon Bagel with Caper Cream Cheese

You just can't beat a bagel for breakfast!

Cooking Time: 5 minutes

Ingredients

  • 250g cream cheese, softened*
  • 2 spring onions, finely chopped
  • 1 tablespoon capers, chopped
  • 2 tablespoons chopped parsley or dill
  • 2 teaspoons Dijon mustard
  • 2 teaspoons lemon juice
  • salt and pepper, to taste
  • 4 sesame seed bagels, halved horizontally

Method

Mix cream cheese until soft and creamy, and stir in spring onions, capers, parsley, mustard and lemon juice and season to taste. Lightly toast the cut side of the bagels under a hot grill, spread both sides with Caper Cream Cheese, top bottom half with smoked salmon and sandwich with the top of the bagel. Serve sprinkled with pepper and parsley.

Tips

* To soften cream cheese, cut into cubes, bring to room temperature and mix with a spatula until creamy. Alternatively, chilled cubed cream cheese can be gently warmed in the microwave on Medium Low for 10-20 seconds to soften.
