Spiced Chicken, Cauliflower and Pumpkin Tray Bake
A super-easy roasting tray chicken dish spiced with Middle Eastern flavours.

Cooking Time: 40 minutes

Ingredients

  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 8 chicken chops or thighs
  • 1/2 cauliflower, cut into florets
  • 1/2 butternut pumpkin, diced
  • 4 unpeeled cloves garlic, smashed
  • olive oil, for drizzling
  • juice of 1/2 lemon
  • 2 tablespoons pepitas or chopped pistachios
  • chopped continental parsley, for sprinkling

Method

Combine spices and salt, and use half to coat the chicken and place on a large roasting tray. Toss cauliflower, pumpkin and garlic with a little oil and remaining spices and arrange around the chicken. Drizzle with lemon juice and olive oil. Roast at 200°C for 30-40 minutes until chicken is golden and cooked through. Serve sprinkled with pepitas and parsley.
