Spinach and Tilsit Baked Eggs with C
Egg and bacon go to another level in this recipe with spinach and good cheese.

Serves:

2-4

Prep Time: 10 minutes

Cooking Time: 20 minutes

Ingredients

  • 2-3 slices multigrain bread, cut into cubes
  • 2 tablespoons olive oil
  • sea salt and freshly ground black pepper, to taste
  • 4 rashers streaky bacon, sliced
  • 150g baby spinach leaves
  • ¼ cup cream
  • 100g tilsit, gruyere or raclette, grated
  • 4 large free range eggs

Method

Toss bread cubes with olive oil on an oven tray and season. Bake at 200°C for 5-10 minutes until golden and crisp. Meanwhile, fry bacon in an ovenproof skillet until golden brown. Add spinach and cream and cook, stirring until spinach has just wilted. Reserving ¼ cup for garnish, sprinkle with tilsit. Use the back of a spoon to form 4 round wells in the mixture and break an egg into each. Bake at 200°C for 10-15 minutes until the egg whites are just set. Serve sprinkled with reserved Tilsit, pepper and croutons.
