Toffee Apple Cake

Caramely apples set into a buttery cake base will make all your dreams come true!

Makes:

1 x 25cm round cake

Prep Time: 20 minutes

Cooking Time: 45 minutes

Ingredients

  • TOFFEE APPLE
  • 6 green apples
  • 1/2 cup sugar
  • 1/3 cup water
  • 1 tablespoon lemon juice
  • 50g butter
  • CAKE
  • 2 large eggs
  • 1 teaspoon vanilla essence
  • 1 cup sugar
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1/2 cup warm milk
  • 125g butter, melted

Method

  • Peel, core and slice the apples and arrange on the base of a 25cm round springform cake pan.
  • Heat sugar and water in a saucepan, stirring until the sugar dissolves, then bring to the boil, without stirring until a golden toffee colour. Mix in lemon juice and butter and, working quickly, pour over apples.
  • Beat eggs, vanilla and sugar until thick and creamy. Sift flour and baking powder on top and fold in gently. Stir in milk and melted butter. Pour over apples in cake pan and bake at 180°C for 40-45 minutes or until golden brown.
  • If the cake is colouring too quickly, cover with foil for the duration of the cooking time. Allow to stand 5 minutes before turning out upside down onto a serving plate.

Tips

  • Measure out all ingredients first as the apples will brown if they stand too long.
  • STYLING Arrange apple slices in the tin, starting from the outer edge, with slices facing in the same direction to creating a flower pattern.
