Triple Chocolate Chip Cookies
Chocolate chip cookies are always a winner but when you make them with milk, white and dark chocolate, well, they are irresistible.

Prep Time: 20 minutes (plus 15 min refrigeration)
Cooking Time: 12 minutes
Ingredients
- 1 1/2 cups plain flour
- 3/4 cup cocoa
- 1 1/2 cups brown sugar
- 180g butter
- 150g dark chocolate, chopped
- 3 eggs
- 1 cup milk choc bits
- 1 cup white choc bits
Method
Sift the plain flour, cocoa and brown sugar into a large mixing bowl. Melt the butter and chocolate together in the top of a double saucepan over simmering water or in a microwave on medium for approximately 2 minutes, stirring occasionally. Mix chocolate mixture into flour and add eggs, choc bits and white choc bits and combine well.
Refrigerate mixture for 15 minutes.
Using lightly oiled hands, roll tablespoonfuls of mixture into balls. Flatten onto baking-paper lined baking trays and bake at 180°C for 12 minutes or lightly browned underneath.
Remove onto a wire rack to cool before storing in an airtight container.
Tips
To make Ice Cream Cookie Sandwiches, sandwich two cookies together with a big scoop of ice cream and dust with icing sugar. Eat immediately!
