UBER Green Salad

Uber Green Salad
The green salad to end all green salads!

Serves:

6-8

Prep Time: 30 minutes

Cooking Time: 15 minutes

Ingredients

  • 1 bunch asparagus, trimmed
  • 1 bunch broccolini
  • 200g sugar snap peas, trimmed
  • 1/2 cup frozen peas
  • 120g baby spinach leaves
  • 2 baby gem lettuce
  • 1 spring onion, chopped
  • HONEY DIJON DRESSING
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1/4 cup lime juice
  • 1/3 cup macadamia oil or light flavoured oil
  • sea salt and freshly ground black pepper, to taste

Method

  • Blanch asparagus, broccolini, sugar snap peas and peas in separate batches, in a pot of water, removing with tongs or a slotted spoon when just tender but still bright green, refreshing under cold water and draining well. Cut the broccolini into lengths that match the snap peas. Cut the gem lettuce into wedges. Arrange the spinach on a large platter and layer with all the greens. Drizzle with dressing and sprinkle with spring onions.
  • HONEY DIJON DRESSING Shake all ingredients together in a jar and season to taste.
