Peach Raspberry Cobbler with Lemon Thyme
Best made when fresh peaches are in season!
Serves:

Cooking Time: 30 minutes
Ingredients
- 1 kg fresh peaches, cut into wedges, stones removed
- 2 tablespoons sugar
- 2 tablespoons cornflour
- 1 punnet raspberries
- 2 tablespoons lemon thyme leaves, optional
- 1 cup plain flour
- 3/4 cup caster sugar
- 1 teaspoon baking powder
- 125g butter, softened
Method
Combine peaches, sugar and cornflour together in a pie dish. Sprinkle with raspberries and lemon thyme. Combine flour, sugar and baking powder together and mix in butter, squeezing with your hand to make a stiff dough. Crumble dough onto the top of fruit and bake at 200°C for 30 minutes until golden brown. Serve with cream or vanilla ice cream.
