Choc Mint Mousse

Choc Mint Mousse
This easy mix mousse, is rich and indulgent and that touch of mint really sets it off.

Makes:

8 (or 16 shot glass size)

Prep Time: 30 minutes (plus overnight setting time)

Cooking Time: 5 minutes

Ingredients

  • 250g dark cooking chocolate, chopped
  • 600ml thick custard
  • 300ml thickened cream
  • 1 Peppermint Crisp® chocolate bar, chopped into shards

Method

Combine chocolate and custard in a large glass bowl and microwave on High for 2-3 minutes, stirring occasionally, until chocolate has melted. Allow to cool. Whip cream and fold into chocolate mixture. Portion into serving glasses and refrigerate, preferably overnight, until set. Serve garnished with shards of Peppermint Crisp.

Tips

Make Chocolate Mousse Shots by serving in small shot glasses. Substitute Peppermint Crisp®, for Chocolate Flake® or use berries instead. Note: most store-bought custards are not made with egg which makes this suitable as an egg-free recipe but please check ingredients as necessary.
