Fig and Pine Nut Tarte Tatin

Using puff pastry, this is a quick tart to make when you have fresh figs. The sprinkle of toasted pine nuts and thyme and an exotic touch.

Cooking Time: 20 minutes

Ingredients

  • 1/2 cup sugar
  • 1/3 cup water, extra
  • 50g butter
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh thyme
  • 6 large fresh figs, halved
  • 2 sheets frozen puff pastry, thawed
  • 1 tablespoon toasted pine nuts
  • double cream, for serving

Method

Heat sugar and extra water in a heavy based frypan that can go in the oven, stirring until dissolved then bring to the boil, without stirring, until a light golden toffee colour. Stir in butter and lemon juice until melted to make a caramel. Stir in thyme. Arrange figs cut side down into the caramel. Cover with a pastry sheet, and place the second pastry sheet on top in a diamond shape. Tuck in the edges and prick with a fork. Bake in the upper half of the oven at 200°C for 15-20 minutes or until golden brown. Allow to cool and carefully turn upside-down onto serving dish (use one with a lip so the toffee juices don’t escape). Sprinkle with pine nuts, extra thyme and serve with cream.
