Parsley and Pine Nut Crusted Barramundi

Tender oven baked fish fillets topped with a crunchy pine nut crumb.

Cooking Time: 15 minutes

Ingredients

  • 1/4 cup currants
  • Grated rind and juice 1 lemon
  • 2 cups fresh sourdough breadcrumbs
  • 1/4 cup finely chopped parsley
  • 1 clove garlic, crushed
  • 1/4 cup toasted pine nuts
  • 1 teaspoon salt
  • 2 x 500g barramundi fish fillets
  • extra virgin olive oil, as needed

Method

  • Combine currants and lemon juice and stand for 10 minutes.
  • Combine breadcrumbs, parsley, garlic, pine nuts, salt and grated lemon rind together.
  • Place fish, skin side down, on an oven tray lined with baking paper. Rub a little oil onto the surface. Press crumb mixture onto the fish. Drizzle with oil.
  • Bake at 200°C in the upper part of the oven for 15 minutes, until crumbs are golden and fish is just cooked through.
  • Sprinkle with extra parsley leaves and serve with lemon wedges.

Tips

Any firm white fish fillets can be substituted.
