Parsley and Pine Nut Crusted Barramundi
Tender oven baked fish fillets topped with a crunchy pine nut crumb.
Serves:
4
Prep Time: 20 minutes
Cooking Time: 15 minutes
Ingredients
- 1/4 cup currants
- Grated rind and juice 1 lemon
- 2 cups fresh sourdough breadcrumbs
- 1/4 cup finely chopped parsley
- 1 clove garlic, crushed
- 1/4 cup toasted pine nuts
- 1 teaspoon salt
- 2 x 500g barramundi fish fillets
- extra virgin olive oil, as needed
Method
- Combine currants and lemon juice and stand for 10 minutes.
- Combine breadcrumbs, parsley, garlic, pine nuts, salt and grated lemon rind together.
- Place fish, skin side down, on an oven tray lined with baking paper. Rub a little oil onto the surface. Press crumb mixture onto the fish. Drizzle with oil.
- Bake at 200°C in the upper part of the oven for 15 minutes, until crumbs are golden and fish is just cooked through.
- Sprinkle with extra parsley leaves and serve with lemon wedges.
Tips
Any firm white fish fillets can be substituted.
