Sour Cherry Coconut Slab Cake
Sweet coconut and sour cherries play off each other in this easy-mix, quick-to-bake cake.
Makes:
1 x 20cm x 30cm slab cake
Prep Time: 15 minutes
Cooking Time: 30 minutes
Ingredients
- 125g butter, melted
- 1 cup moist flakes coconut
- 1 cup sugar
- 4 eggs
- 1 cup self-raising flour
- 600g jar pitted sour cherries, drained
- icing sugar, for dusting
- toasted flaked coconut, for garnish, optional
Method
Combine butter, coconut, sugar and eggs in a bowl. Fold in flour and pour into a buttered and lined 20cm x 30cm slab tin. Dot the cherries into the batter, pressing with your finger. Bake AT 200°C for 30 minutes until golden brown. Allow to stand for 5 minutes before removing onto a wire rack to cool. Serve dusted with icing sugar and garnished with toasted flaked coconut.
