Roast Sweet Potatoes with Chilli Peanut Praline

A sweet and spicy side to go with pulled pork, roast turkey or chicken.
Serves:
6-8
Prep Time: 15 minutes
Cooking Time: 40 minutes
Ingredients
- 1 kg sweet potatoes, scrubbed
- olive oil, for drizzling
- sea salt, to taste
- 1/4 cup coriander leaves
- CHILLI PEANUT PRALINE
- 1/4 cup caster sugar
- 2 tablespoons water
- 1/2 cup salted roasted peanuts, chopped
- 1/4 – 1/2 teaspoon dried chilli flakes
- 1 teaspoon butter
- sour cream, for serving
Method
- Cut diagonal slashes into the top of each sweet potato taking care not to cut all the way through. Place in a roasting dish, drizzle with oil and season with salt. Roast at 200°C in the upper half of the oven for 30 minutes until golden brown. Sprinkle with Chilli Peanut Praline and coriander leaves and serve with sour cream.
- CHILLI PEANUT PRALINE Makes 1 cup Heat sugar and water in a saucepan, stirring until the sugar dissolves then boil with out stirring until a golden caramel colour. Working quickly, stir in peanuts, chilli flakes and butter. Turn out onto a baking paper lined tray, spread out and allow to cool until hardened. Chop into small pieces and store in an airtight container.
