Succotash

Sufferin' Succotash! It's a colourful mix of beans, corns and other bright vegetables!!

Ingredients

  • 1 large carrot, peeled and thinly sliced
  • 100g butter
  • 2 spring onions, chopped
  • 1 zucchini, diced
  • 1 punnet cherry tomatoes, halved (100g)
  • 400g can butter beans, cannellini or red kidney beans, rinsed and drained
  • 400g can corn kernels, drained
  • sea salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped mint

Method

Place carrot and 1/2 cup water in a large frypan, cover and bring to the boil. Simmer for 5 minutes until tender. Drain off water. Add half the butter to the pan over medium heat and sauté carrots with spring onions, zucchini and cherry tomatoes until vegetables have softened. Add corn and beans and sauté until heated through. Stir in remaining butter, season to taste and stir in mint just before serving.
