Sticky Soy Chicken with Sesame and Peanuts
An easy weekday dinner of family-friendly sweet soy chicken with a sprinkle of peanuts and sesame.

Ingredients

  • 1.5kg chicken drumsticks
  • 1/2 cup kecap manis (Indonesian sweet soy sauce)
  • 1/2 cup Chinese rice wine
  • 1/3 cup lemon juice
  • 4 cloves garlic, crushed
  • 1 tablespoon grated ginger
  • 2 spring onions, chopped
  • 1/4 cup salted peanuts, chopped
  • 2 tablespoons toasted sesame seeds
  • steamed rice, for serving
  • steamed broccolini, carrot sticks and baby corn, for serving

Method

Arrange chicken in a large roasting dish. Combine kecap manis, rice wine, lemon juice, garlic and ginger and use to coat chicken. Roast at 200°C for 45 minutes, turning chicken occasionally. Drain pan juices into a saucepan and return chicken to oven to brown for a further 15 minutes, using grill if needed. Bring pan juices to the boil and simmer for 5 minutes until thick and syrupy. Pour over chicken, and sprinkle with peanuts and sesame seeds. Serve with rice and vegetables.
